I just want to know if it's possible. I really need some of that stuff back. It had been the first time I connected the phone to my Mac. I wasn't able to get the info on my phone saved before the update. It was just confusing. Anyone think they can help?

Probably not. If she plugged in the iPhone after adding the info, iTunes would have opened and displayed a message like "iTunes has detected a new iPhone. Do you want to set it up as a new phone or restore it from a backup [Backup Name]?". In case she elected to restore the iPhone, all content on the new phone would have been erased and replaced by the stuff in the backup. That includes pictures. Concerning the calendar dates, it is possible that those are still there (in case they were made in a MobileMe calendard for example, which means the appointments would have been stored on the web somewhere).
